I have spent some years with high end headphones. The Stax SR-900 with a decent amp (not Stax) is the way to go for your classical music. For rock and other genre, I would look at Planars, they have the warmth and body, great bass extension and low fatigue v other types.
I would thus look at the Audeze LCD4-Z or LCD3 used. The 4-Z is easy to drive.
This is the crucial question. The headphone is part of a system. Your money may best be spent upstream. If you're playing music through a computer soundcard, there is much room for improvement, with an outboard DAC/amp. IME, Sennheiser headphones sound best driven by a tube amp, but some consider tubes a hassle.

Sadly, the next upgrade I can think of that you might like is the US$1500 Focal Clear Mg headphones.
HD700 is just too good and headphones prices have gone up.
I haven’t listened to Arya Organic but I do like HiFiMan headphones and I guess they’re currently on sale from US$1300 to US$979. So definitely a great suggestion too.
