I've heard the Sadurni's at a number of audio shows and they sound very life-like. They don't have that "hand-cuppy" coloration that horns so often have.

What temperature oven and for how long?
I normally use a cast iron pan over a gas stove, sear, then lower the heat. But, when it is a really thick steak this method is not optimal, but for the searing.
I like my steak rare, plus. In other words, not cold because of flavor, but very red...
