has anyone heard the 2160 vs 2060?
Yes. I have heard them both, in the same room, with Wilson XLF speakers.
I have owned the 2060 for several years and it is a great amplifier. The 2160 is incrementally better at doing the same things. There is an excellent review of the 2060 in a back issue of Positive Feedback Online that really got it. The 2160 is a little more of the same. My 2060 is in for service and I am temporarily using a Classe CA2200 in its place. The Classe is a very good amp but its like half the music is gone -- sort of like the music was suddenly compressed.
If you are asking if I am thinking of upgrading to the 2160 the answer is I really want the 3060.
I recently upgraded my 2010/2060 system to a 2110/3060 combo. I'll post about it in detail when time permits. Suffice it to say, very pleased indeed.

I got the Boulder 3060 stereo amplifier about three weeks ago and have been extremely impressed -- it is actually mind boggling. It has dramatically improved the sound of my system, far beyond what I thought was even possible. There are no reviews I know of for the 3060 but this review of the 3050s is equally applicable to the 3060:

Amazing...i have always been impressed with the Boulder 2060 and was 'T-H-I-S' close to getting it and by a margin comprised largely of personal taste, decided to go for Colosseum. From the review you posted, i can imagine how great the sound is. Gryphon and Boulder are my two favorite SS amp names for sure. Congrats and enjoy.
When I bought 2060 in 2010, I had Boulder convert it to 240V and had a dedicated 240v line that could provide up to 30 amps put in the room. The guys at Boulder said that would maximize the 2060 performance and it did. Or it was just a fiendish Boulder plot to make sure there was no impediment to my getting the 3060.
